HOME MADE PINA COLADA NIGHT!!!!!!!
Yesterday, Matt and Padraic (who is visiting for the weekend) decided that they needed to go get some sort of saw contraption to cut down the coconuts in the trees in the back yard. Matt decided that the coconuts would make delicious pina coladas.
I watched with my cell phone poised in hand ready to call 911 in any of the following circumstances:
1. A coconut fell on someone.
2. The saw broke and sawed someone.
3. Someone hammered themselves trying to break the shell.
or
4. any of the other things that could possibly go wrong with this picture.
Step 1: Determine there are too many coconuts in the tree:
Step 2: Go buy something dangerous at Home Depot (thanks for the gift card Aunt Mary . . .) and then USE it! *hides eyes from impending disaster*
Hey- it worked and no one got hurt!

Step 3: Use more tools:
Step 4: Get the coconut water out . . .
Yep! It's GOOD!
Step 5: Mix with pina colada mix, coconut water, rum, and ice. Serve ice cold in a coconut!
Step 6: Cheers!!
The results were surprisingly FABULOUS!! I couldn't be more pleased!! They were ridiculously sweet but totally yummy. One was enough though. It was totally worth the effort but as Matt said, "this is not going to be a weekly thing here. . . this is strictly when we have guests." Let's see how long that lasts.
